Cheese days at the festival "Golden Autumn 2017"

Golden autumn has arrived, which means that a large-scale gastronomic festival, which was held with great success last year, is returning to the streets of Moscow. Festival " Golden autumn-2017", within the framework of which "Cheese Days" will be held, this year promises to be even larger: it will affect not only several central squares and streets of the capital, but also go to the districts. Visitors to the Cheese Days can expect:

  • more than 100 participating Russian cheese makers;
  • more than 200 tons of craft cheese of 100 different varieties, which you can not only buy, but also try and evaluate;

At all central sites, cheese factories will work in shifts, changing every 5-6 days:
- 18 cheese factories simultaneously on Revolution Square;
- 12 cheese factories on Tverskaya, near the monument to Yuri Dolgoruky;
- 4 cheese factories on Klimentovsky Lane, near Tretyakovskaya metro station;
- counter of the Istra cheese factory in Novopushkinsky Square.

A cheese fair will be held on Tverskaya Square, with themed days from France, Switzerland, the Netherlands and Italy. Visitors will enjoy tastings, lectures by cheese sommeliers and cooking master classes.

Festival guests will also be able to try 200 varieties of cheese from different regions of Russia: brie, emmental, gouda, parmesan, cheddar, dorblu, suluguni and more.

Holland (it was from there that Peter the Great brought the European recipe for cheeses to Russia, in particular Gouda, which later became the famous Kostroma cheese);

Switzerland (not only emmental, but also the famous green cheese, the production of which is being revived today in Russia);

Italy (the most famous cheeses of this country are mozzarella, the production of which Russian cheese makers have mastered to perfection, as well as Parmesan and Gorgonzola);

Products from all over the country can be tasted at 49 venues in the capital: 24 of them opened in the center, another 10 venues and 15 regional fairs - in urban districts.

Meat week

The first stage of the festival will take place in Moscow from September 23 to October 2. These days, in the festival shopping chalets you can find beef (marbled “Primbeef”, as well as pasture-fed), lamb, veal, pork, rabbit, Yamal venison, bear meat, wild boar and roe deer meat. In addition to the chalets, the meat market will also open in three tented pavilions on Revolution Square.

You can learn how to cook meat dishes yourself at the culinary school on Kuznetsky Most, under the guidance of famous Moscow chefs and participants in the culinary show “MasterChef.Children”.

Cheese days

The second stage of the festival will last from September 30 to October 2. As part of the Days, more than 100 varieties of cheese from Russian producers will be presented, including brie, camembert, gorgonzola, mozzarella, burrata, etc.

Gorgonzola, according to the organizers, is produced by Moscow cheesemakers according to Italian recipes. In the Lipetsk village of Maslovka, traditional French technologies are also used to produce soft, aged cheeses. Other varieties include semi-hard “Gubernatorsky Cheese” from the Moscow region, hard “Bergkese” from the Istrinskaya cheese factory, etc. Another new Moscow variety of cheese will be cooked directly on Manezhnaya Square.

More than 50 farmers from the Moscow region, Leningrad, Tula, Tver, Nizhny Novgorod, Ryazan, Ivanovo, Voronezh regions, Omsk, Krasnodar region, North Caucasus and other regions. Cheesemakers who started their production after the introduction of the food embargo will give lectures to everyone. As part of the “Days,” master classes on frying cheese and preparing its various varieties will also be organized.

Fish week

The last stage of the festival will take place from October 3 to October 9. These days, about 200 types of fish - chilled, frozen, dried, lightly salted and canned - will be presented on the market counters in central areas. Among them: Caspian hall or royal herring, sea ​​urchins, sea cucumbers, mackerel, carp and others.

Manufacturers from Vladivostok, Sakhalin, Kamchatka, Murmansk, and major sea and river ports will present their products at the festival. In the last week of the festival, the City Market on Revolution Square and the culinary school on Kuznetsky Most will also be retrained to work with fish and seafood.
